This was a last minute made it up as I went kind of dish and I am posting because it was a hit :) the kids even had seconds
you will need:
penne pasta
tomatoes
asparagus
milk
heavy cream
spinach
garlic
salt & pepper
parmesan, ricotta, feta, swiss triangle spread (laughing cow), mozzarella cheese
butter
flour
sugar
dried onions
italian seasoning
dried basil
dried parsley
tomato
in a saucepan.. add about 3-4 Tbsp butter, melt. Then add about 4-5 Tbsp flour and make a rue.. thickens
add a few cups of milk and heavy cream 1:1. add about 1 Tbsp garlic and salt and pepper to taste. mix on low heat until thickens and reduced.
add about 1-2 Tbsp of ricotta & feta cheese with 1 or 2 laughing cow swiss cheese triangles. mix until melted. add a pinch of sugar :)
in another pan.. melt about 1 Tbsp butter with 1/2 Tbsp garlic and a few shakes of dried onions. add broken up asparagus spears in 1 in pieces.. cook about 1/2 way.
preheat oven to 350 degrees.
cook penne pasta w/ italian seasoning and add 1/2 to bottom of dish. then add 1/2 white cheese sauce on top. sprinkle parmesan cheese and shredded mozzarella ontop with some chopped spinach. sprinkle dried basil and parsley on top.
add another layer of pasta and the rest of sauce on top. shred mozzarella cheese on top.. then, add more chopped spinach, 1 chopped roma tomato and asparagus
bake for about 10 min..until cheese melts
