Macadamia nut chicken

Macadamia nut chicken with white cheddar mashed potatoes, green beans and pineapple-papaya marmalade (similar to Kona Grill Restaurant)

cut white potatoes and boil w/ chopped onions, salt, & white pepper

heat oil in pan and depending on how thick your chicken breasts are.. I sliced them in thirds (cutting lengthwise, so the breasts are thinner)
salt & pepper both sides of chicken

Preheat oven to 350 degrees

prepare in 3 seperate dishes
1st: flour
2nd: 3 eggs and 1/2c milk
3rd: 2c panko bread crumbs and 1/4c chopped macadamia nuts
(chop your macadamia nuts in food processor)

Meanwhile.. cook your green beans

take your chicken breasts and dip both sides in flour, egg wash, and then bread crumb mix
place in hot oil

cook until golden brown

place in oven for about 16 min

make your sauce!!
add 2 c heavy cream, 1/4c soy sauce to boil

mix 2 Tbsp cornstarch and 2 Tbsp water until thick; add to cream sauce

turn heat down on sauce and simmer; add a dash of sugar

drain your potatoes and add to pan with butter, sour cream, cream, white pepper, & salt: mix with a mixer. Add shredded white cheddar and stir w/ a spoon (heat turned off)

in another pan.. heat equal part pineapple and papaya chunks w/ a dash of sugar
blend when softened

Now take a bit of the chicken and scoop up some mashed potatoes and the marmalade all together.. it is legit!

Cauliflower with cream sauce

This recipe isn't quite exact, so bear with me on this one...

in a sauce pan, add:
about 1-2 T butter
1 T flour.. mix

add 2 c heavy cream
about 1 c milk

add 1 egg

salt & pepper

opt. a few dashes of parmesan cheese, 1 laughing cow cheese (or 1 tsp cream cheese) and/or shredded cheese (at the end after you remove from heat)

broil for about 5 min max

Pork Egg Rolls

cook ground pork; season w/ season salt add a few drops of sesame oil, soy sauce, & rice wine vinegar
add chopped cabbage & shredded carrots & bean sprouts
add green onions
sprinkle some sugar & mix

simmer for a few minutes

add about 1-2 spoonfuls in egg roll and fry on med-high heat

serve w/ sweet chili sauce or chili sauce:

2 tsp ketchup
2 tsp sugar
2 tsp vinegar
4 tsp water
sesame oil & worstechire & siracha hot sauce (as desired)

Meaty & Cheesy Lasagna

I apologize for the terrible picture quality and overall picture.. I made this for a church function and decided to take a picture of it with my phone after it had already been partially devoured..otherwise I was told it was delicious :)

This is a homemade mostly from scratch..so it isn't your quick and easy fix meal..but the quality is there.

The sauce:
1 can 28 oz crushed tomatoes
about 1/2 white onion, chopped
2 cloves garlic, chopped
3/4 celery stalk, cut in pieces
4-5 baby carrots
2 bay leaves, or a dash of crushed bay leaves
4 Tbsp butter
about 1/2 c olive oil
5 fresh basil leaves
small handful of fresh chopped parsley
dash of fennel seed
sea salt & pepper

add butter to pan, onion, and garlic..saute. add olive oil. mix the rest of the ingredients. simmer for 30 min-1 hr.
blend in small batches (if you used whole bay leaves, you can take them out)

add about 1/2 c or so of alfredo sauce :)

Ricotta filling:
1/2 large Ricotta tub (whole milk)
large handful of fresh chopped baby spinach (I like to cut off the stems)
1/2 c fresh parmesan cheese (not the kind in the container)
1 egg
2 triangles laughing cow swiss cheese
about 1/2 c or more grated mozzarella cheese

mix ingredients together

-cook lasagna noodles al dente with italian seasoning. add to cold water and let dry.
-brown 1 lb lean hamburger meat, season with seasoning salt
-brown 2 italian sausages ( I took out the casing and cooked it in small pieces)

drain grease and add to sauce for about 15-30 min.

Heat oven to 450 degrees

in a about a 9x13 dish, add a layer of sauce, sprinkle grated mozzarella cheese, then lay down noodles side by side, spread a layer of ricotta filling on noodles, then another layer of sauce and repeat..although I only added the grated mozzarella cheese at the bottom and the top, not all the layers. once you get to the top and you had noodles, add another thin layer of sauce and grated mozzarella cheese on top. Sprinkle top with parsley.
Bake 450 for 15 min, cover with foil

You will not be disappointed!

Chicken nuggets with Sweet & Sour Sauce

cut up chicken breast pieces to desired size and make sure all are similar in size and make sure they're no thicker than 1/2 in thick.


another option is: cube chicken and place in food processor and blend into a paste. form into balls and flatten into nugget pieces.

season chicken pieces with: season salt, salt, parsley, onion powder, and pepper
mix 2 eggs to about 1/2 c milk..set aside
mix about 1c flour, 1/4c finely grated parmesan cheese, 1tsp paprika, oregano, and dry mustard, salt and pepper..set aside
heat hoil to at least 350 degrees

place chicken nugget pieces in flour mixture, coat evenly, then egg/milk mixture, and flour mixture again. Place on wax paper

when oil is nice and hot, place about 3-4 pieces in oil and fry for a few minutes until golden brown, turning the pieces occasionally.
drain on newspaper or paper towel.
(you can freeze leftovers and bake them at 350 degrees for 10 minutes or so)
Sweet and Sour sauce:

1 c apricot preserves

3 tbsp heinz 57 sauce

3 tbsp italian dressing

3 tbsp soy sauce

combine and serve!
