Broccoli bacon alfredo

(warning: you might over eat when you make this)

heavy cream
milk
Parmesan cheese
mozzarella cheese
garlic
butter
kosher salt
white pepper
white wine vinegar
boursin garlic & herb spread
chicken base
flour
water
broccoli
bacon
angel hair pasta (cooked) 1 package

(I apologize these measurements are not exact... if you're one that has to follow an exact recipe.. then I'm sorry about this, otherwise most of it is based on look and feel)

put some butter in a pan (about 2 T) add about 1 T flour and make a roux. add chopped garlic (depending on how garlicky you want.. about 1-2 cloves) let that thicken up a big. add about 1/2 T chicken base and some water and a dash of white wine vinegar. sprinkle some kosher salt and white pepper

add heavy cream (about 2 cups) and some milk (1 c) and then let that boil for a bit and keep stirring until it thickens up.

add your cheese.. as much as you feel like (about 1 cup of shredded mozz and 1/2 c parmesan) turn down the heat to low. add salt to taste

cook your angel hair pasta.. or whatever kind you want: al dente. set aside and drain

cook some bacon (however much you like...kinda wish I made more! I just had some leftovers from breakfast, so I threw it in) and cook about 1 head of broccoli (with salt) separately from your bacon (haha)

throw your pasta in a separate dish and add your alfredo sauce. Add your bacon and broccoli and mix it all together.

Enjoy

Then combine chicken, artichokes, about 1 c mozzarella cheese, parmesan, sun dried tomatoes, alfredo and tomato sauce.

beat softened cream cheese, milk, heavy cream, garlic powder, basil, spinach, and ricotta in seperate bowl.

add about 1/3 or so of cheese mix to chicken mix and combine.
spread a small amount of cheese mix on bottom, then 3 noodles, then chicken mix, then top again with cheese mix, repeat ( sprinkle mozzarella cheese in between layers)

on the very top, finish with leftover cheese mix and sprinkle mozzarella cheese. sprinkle parsley and cover with foil.

Chicken Marsala

ok I realize that a lot of my recipes have asparagus w/ it ..it's just so good!
Chicken Marsala w/ pasta

There are 2 ways this recipe can be put together:

1/2 tsp taragon
1/2 c marsala wine (or chicken broth)
2 tbsp white wine vinegar
1/4 c water
1/4 tsp garlic powder

blend ingredients and marinade w/ chicken for 3-5 hours
bake for 30 min 350 degrees

in a saucepan combine:
1/4 c marsala wine (chicken broth)
1/4 c beef broth
pinch of sugar
about 1 c heavy cream
1/2 tsp taragon
1/4 tsp salt & pepper
2 tbsp lemon juice

pour over chicken & enjoy

Now.. you could do that or you could
saute some onions and garlic in a pan and add your chicken w/ all the above ingredients and cook on med low for about 1 1/2 hrs or so..
then pour over noodles and done

if the sauce isn't thick enough you can add some alfredo sauce and still tastes great :)
also I added some white cheddar cheese.. super yum
(thanks to Roma for this recipe)

Creamy Pasta Salad

This pasta salad is delicious..don't be discouraged by some of the ingredients.. this recipe does take some time to prepare, but well worth it! Props to Shelle Clouse for this recipe :)

2 bags of color rotini or bow tie pasta (cooked and cooled) add a little olive oil so they don't stick
2-3 cups mayo
2-3 Tbsp dijon mustard
1 tsp salt
1 tsp pepper
4-6 Tbsp red wine vinegar recipe or apple cider vinegar
1/2 cup sliced black olives or more
1 cup cherry tomatoes halved
1/2 cup red bell peppers (opt)
sliced salami
chopped red onion
1/2 cup feta cheese crumbles
4-6 Tbsp garlic
1 cup grated mozzarella cheese
Mix ingredients well and enjoy!

let the red wine vinegar recipe sit in an air tight container at room temp for about 2 weeks prior

Red Wine Vinegar recipe:

basil
oregano
rosemary
thyme
bay leaves
garlic
orange peel
peppercorn pepper
Red Wine Vinegar
mix herbs 1:1 with about 2 cups vinegar

Orzo Pesto Salad

1 bag of orzo pasta about 1/2 jar classico pesto sauce/spread (more or less to your liking)
olive oil
apple cider vinegar
red onion, green onion, parsley, cilantro
feta cheese crumbles

chop the onions and fresh herbs, set aside. Cook the bag of orzo pasta with italian seasoning in the water..until al dente. drain and rinse in cold water. add the pesto sauce and mix.. start adding about 1:2 ratio of the olive oil and vinegar (1 being the vinegar and 2 the oil)..start with about a tablespoon and go from there to acheive the consistency and acidity you prefer. add the onions and herbs and mix in feta cheese crumbles

*store in fridge the night before a party and the flavors kick in even more! just make sure you check consistency to see if you need to add any more oil & vinegar.

(again I appologize I don't have exact measurements.. I invented this recipe just last week for Easter and wanted to see if everyone liked it before I wrote it down as a recipe)

Pasta Pizza

This is one of the fastest and easiest meals you can make and be creative!
For this one, I did small cheese ravioli.. but you can do any kind of pasta.
Cook the pasta "al dente". Drain and set aside. In a sauce pan, simmer pasta sauce..any kind you like..marinara, whatever! and add: italian seasoning, 1 triangle laughing cow swiss cheese spread (I use this alot), a few tbsps of heavy whipping cream and alfredo sauce.
Add pasta to pan and pour sauce over it. Then add shredded mozzerella cheese on top.
Then.. add your ingredients..whatever you like on your "pizza".
I added: cherry tomatoes, olives, and pepperoni. Then I sprinkled the top with parmesan cheese. Bake at 350 degrees for 10-15 minutes.

Baked Rigatoni

This recipe is simple and fairly quick!
*Cook the rigatony pasta for about 10 minutes. (I used 3/4 bag) add Italian seasoning
*Cut a 1/2 of kielbasa sausage in half lengthwise and again into pieces.
*Cut 1/2 shallot, mince
*Lightly grease pan, add shallots for a few minutes, then add sausage. cook until crispy
*In a saucepan, add tomato sauce (I used classico tomato & basil and Emeril's marinara), add creamy Alfredo & heavy cream, add 1 laughing cow cheese triangle, add a handful cut broccoli; simmer.
*Add crispy sausage; cover and simmer on med-low.
*Drain pasta and add to baking dish. drizzle with Parmesan cheese and mix.
*Add Sauce on top and evenly distribute. add shredded mozzarella on top.
*Cover with foil
*Bake 350 degrees for 8 minutes

This is my little rendition of the Baked Rigatony @ Rigatony's :)

Meaty & Cheesy Lasagna

I apologize for the terrible picture quality and overall picture.. I made this for a church function and decided to take a picture of it with my phone after it had already been partially devoured..otherwise I was told it was delicious :)

This is a homemade mostly from scratch..so it isn't your quick and easy fix meal..but the quality is there.

The sauce:
1 can 28 oz crushed tomatoes
about 1/2 white onion, chopped
2 cloves garlic, chopped
3/4 celery stalk, cut in pieces
4-5 baby carrots
2 bay leaves, or a dash of crushed bay leaves
4 Tbsp butter
about 1/2 c olive oil
5 fresh basil leaves
small handful of fresh chopped parsley
dash of fennel seed
sea salt & pepper

add butter to pan, onion, and garlic..saute. add olive oil. mix the rest of the ingredients. simmer for 30 min-1 hr.
blend in small batches (if you used whole bay leaves, you can take them out)

add about 1/2 c or so of alfredo sauce :)

Ricotta filling:
1/2 large Ricotta tub (whole milk)
large handful of fresh chopped baby spinach (I like to cut off the stems)
1/2 c fresh parmesan cheese (not the kind in the container)
1 egg
2 triangles laughing cow swiss cheese
about 1/2 c or more grated mozzarella cheese

mix ingredients together

-cook lasagna noodles al dente with italian seasoning. add to cold water and let dry.
-brown 1 lb lean hamburger meat, season with seasoning salt
-brown 2 italian sausages ( I took out the casing and cooked it in small pieces)

drain grease and add to sauce for about 15-30 min.

Heat oven to 450 degrees

in a about a 9x13 dish, add a layer of sauce, sprinkle grated mozzarella cheese, then lay down noodles side by side, spread a layer of ricotta filling on noodles, then another layer of sauce and repeat..although I only added the grated mozzarella cheese at the bottom and the top, not all the layers. once you get to the top and you had noodles, add another thin layer of sauce and grated mozzarella cheese on top. Sprinkle top with parsley.
Bake 450 for 15 min, cover with foil

You will not be disappointed!

Pizza

have to say that I love pizza and I am pretty picky about my pizza (Therefore, I only like to eat pizza I make or from Barro's)

First:

start off with your favorite pizza dough recipe, if you don't have one: here's a simple one used for the bread/dough machine:

- 1 cup water

- 3 cups bread flour

-1 1/2 Tbsp dry milk

-2 tsp sugar

-1 1/4 tsp salt

- 2 tsp butter

- 1 tsp fast rise yeast

(this makes 1 large pizza)

put ingredients in machine in order. once finished, place in a greased bowl. cover with plastic and towel for 45 min.

roll out the dough to desired size and thickness onto pizza sheet.

sprinkle corn meal onto sheet before dough.

prick dough w/ a fork

Preheat oven 400 degrees and cook for 15-20 min.

TOPPINGS:

first, I made garlic butter and spread over entire dough:

(butter, garlic, parsley)

- pizza sauce

- cheese (mozzarella is best)

- sliced tomatoes

- sliced zuchinni

- pepperoni

- gorganzola cheese sprinkled on top

- olives (optional)

- pizza seasoning: oregano, basil, marjoram
