Barbecue Baked Beans

We went to Joe's Real BBQ the other day and I was really hungry and the shredded pork sandwich and their award winning baked beans were delicious.. so I have been wanting to try to make some baked beans similar to theirs.. I think it's close and also delicious..so says my husband.

  • 1 T olive oil
  • 1/2 small onion chopped
  • 2 cloves garlic chopped
saute these ingredients in a large pot
  • 2 28oz cans baked beans
  • 1 can kidney beans
  • 1 can black beans or 2 cups of black beans (feijao)
  • 1/2 c light brown sugar
  • 1/3 c BBQ seasoning
  • 1/4 c molasses
  • 1 c BBQ sauce
  • 3/4 c shredded pork
  • 1/2 polska sausage diced
add remaining ingredients and simmer for up to 4 hrs

BBQ seasoning:
 1 1/2 c paprika
 3/4 c sugar
 3 3/4 T onion powder

BBQ sauce:
 2 c ketchup
 1 c water
 1/2 c apple cider vinegar
 5 T sugar
 1/2 T pepper
 1/2 T onion powder
 1/2 T ground mustard
 1 T lemon juice
 1 T worstechire sauce

7 beans

A little less than 1/3 of a small bag of each kind of beans:
Lima
Kidney
great northern
navy
black eyed peas
pink
small red

Soak the beans for about 1-2 hrs. drain and rinse.
Add beans to a Crock Pot
cut up 3 slices of a sweet onion, chop and add
Add 1-2 Tbsp garlic, chopped
Add 1 tomato bouillon and 1 bacon bouillon (or you can add cooked crispy bacon later)
a few dashes of dry mustard
1/2 -1 Tbsp molasses
a pinch of brown sugar
a few dashes of salt
Add water, covering the beans

Simmer in crock pot on high for about 4-6 hours. If beans are not yet done, add to pressure cooker for another 20 minutes.

Once they are done, drain juice and add to pan on high heat. Add a couple Tbsp of flour and make a reduction and add sauce back to the beans ( I also added 1-2 Tbsp tomato paste in the sauce/reduction)

This was my first time making this, so if there is some tweeking you think that needs to be done, let me know!

3 Bean & Beef Chili

This is a recipe I came up with that is quick and easy! I will also post my made from scratch recipe in the future and pictures will come soon, when I make it again. I made it for the ward chili cook off and didn't have a lot of time..and it won! so it's fast and still delicious :)
*Brown about 1 lb - 1 1/2 lb ground beef, add onion and garlic & seasoning salt. drain add to crock pot on low
*Sauté 1/2 or whole cut in half twice polska beef smoked sausage with dried onion, garlic, and chopped parsley. add to crock pot
*Add about 3 cans organic tri-bean blend (kidney, black, and pinto) and juice from 1-2 cans.
*Add about 1-2 tbsp Worcestershire sauce, 1/2 c spaghetti sauce (tomato & basil), 1 can petite diced tomatoes, 1 package gonga breath sloppy joe mix, cumin and chili powder to taste, salt & pepper.
Let simmer in crock pot on high and enjoy!!
(it's all about the equal balance of the seasonings..so you really need to taste as you go along) of course the taste will be better as it simmers

Top it off with shredded cheese :)

Feijao / Black Beans

Feijoada: black been stew
For about 1 bag of black beans: first sort through the beans and take out any rocks. soak beans in water for about 2-3 hours. drain.
pour beans into a pressure cooker with water about 1-2 inches above height of beans. add polska kielbasa sausage and 1 cube feijao bouillon (most will not have this, you can try chicken bouillon otherwise) . cook on high for about 15 min.
meanwhile, in a pan: sauté onions, garlic and salt. take out about 1-2 Tbsp of sauce from beans and add to pan with onions, etc. (if you have difficulty opening the lid on pressure cooker, pour cold water over it until seal releases)
add onion mix to beans and continue to simmer until done (about 30 min or so)

Once beans are done (they should be easy to bite, not too mushy) smash beans at bottom with a masher mallet (picture coming soon) another item most may not have..otherwise just mix with a spoon.
