Couscous chicken skillet


Ingredients:
Israeli couscous
4 chicken breasts
salt & pepper
paprika
onion powder
garlic salt
creole seasoning
carrots
spinach
chicken broth

This is one of those experimental meals where you throw a bunch of stuff together and the result is amazing!!

start out by seasoning your chicken breasts (4 of them, if you're feeding a family of 6 (with 4 small children)) 

  •   coat each side with: creole seasoning, paprika, salt, pepper, garlic salt, onion powder
cook in a pan on med-high until about half way cooked through on each side. remove from pan and set aside. 

add your couscous to the pan and chicken broth (ratio 1:1.25). add 1 cube of tomato bouillon, salt and pepper, 1 tsp ketchup and 1/2 c heavy cream.

add chicken and carrots. cover and simmer about 10-15 min. 
add chopped spinach towards the end.

This is a quick and easy weeknight meal!! The kids will even love it and it's healthy!

Spanish Chicken & Rice


This quick and easy meal is delicious!!

to feed a family of 6 (4 small children + 2 adults), you will need:

5 chicken breasts
2-3 T oil
1/2 onion
3 cloves garlic
1 tsp cumin
1 large (19oz) can medium green enchilada sauce
1 3/4 c rice
1 3/4 c water
1/2 c cilantro
1/2 c spinach
paprika & saffron, salt & pepper
zucchini

cut chicken breasts to desired size. season with salt and pepper, and paprika.

add oil to pan and cook chicken to about 1/2 way done on med/high heat.

take chicken out of pan and set aside.

add onion, garlic, and cumin. cook a couple minutes.

add green sauce, rice, water, then chicken on top. cover bring to boil. then turn to low and simmer about 20 minutes.

add chopped zucchini, spinach, cilantro, and a few sprigs of saffron. cook another 5 minutes until done.
