Coconut Thai Chicken

Start off with some olive oil and minced garlic.. sauté
add white wine vinegar (just a dash)
add marinated chicken
Marinade:
dash of: soy sauce, paprika, cumin, salt, & pepper

add some water & coconut milk..simmer for a few minutes to boil
reduce heat and add carrots & snap peas
cover & simmer
close to the end add tomatoes, purple, & yellow or white onion

sprinkle with parsley & serve w/ rice
